Jamaican Chicken Soup Yumm!!!














I am home sick today and had to make some soup to soothe my throat. Check it out: You might try it at home yourself.



Ingredients:





Butternut Squash



Chicken parts (Bone in works well for soup and you can remove it when it's cooked)




Potatoes



Celery




Carrots



Onions



Salt



Cayenne Pepper



1 Packet Jamaican Chicken Noodle soup mix or Cock soup mix



Pimento or Allspice





  1. In a large stock pot bring water to a rolling boil add salt, pepper, onions and allspice.


  2. Add chicken and squash. Boil for 30 mins


  3. Remove chicken and cut off the meat into small pieces


  4. Mash the pumpkin


  5. Add the chicken pieces and add celery, potatoes and carrots


  6. Boil for another 30 mins on low-medium heat


  7. In the last 7 minutes add the soup mix

Music

Music to mine ears!

Burden of Sanity was started by Jervis Daley, an old friend of mine since my highschool days. This is an amazing story of determination. Uhmm Wine



So I am happy to say that I am an avid wine drinker. I really enjoy the different wineries here in Central New York by the Finger Lakes. I had a chance to visit Casa Larga in Fair Haven, NY this past weekend. Uhmm is all I can say the wines were fantastic. I suggest you give it a try! I love sweet wines and this 2009 Riesling that they have is awesome.

Stress Reliver






Hello everyone,



Well lately I have been totally excited about cooking! So I want to share a recipe or two with you. One is for a cheap tuna quesadilla and the other will be a quick baked tilapia. I really enjoy having fish as a part of my diet. First I will begin with the baked Tilapia. You will need:

1.Foil Paper

2.Tilapia Fillets

3.Salt

4.Pepper (Cayenne, or your fave)

5.Salsa (I buy the store brand which is just as good.)

6.Old Bay seasoning

7.Jamaican jerk sauce for extra spice if you want.

8.Lemon juice to rinse the fish


Rinse the fish with lemon juice, season with salt, pepper, old bay, jerk sauce and place inside of a slice of foil paper. Take about 2 tablespoons and cover the fish. Fold over and place into the oven for about 20 mins on 425 degrees. This creates such a scrumptious meal. I usually have this with sweet potato fries. You can pair this up with anything you desire.
Tuna Quesaidilla:
1.tortillas
2.tuna
3.cheese
4.miracle whip
5.pepper
Combine tuna, and miracle whip in a bowl. Fold tortilla in half and stuff it with tuna. If you have a forman grill you can just grill it up for a few minutes. I had this last night and it was uhmm uhmm good :)
Also try this sweet Riesling I have above. Its called Pacific Rim, beautiful bottle with a dragon on the inside. It is a very sweet wine. Runs about $9.00 a bottle. I can say that I know you will like
it. If you are not a dry wine drinker or a wine drinker at all its very tasty.

Emotion Killers

Recently a close friend of mine has had a rather rough time with the opposite sex. If its not one t hing its the other with these "pigs" we call men. This certain fake angel of a man moved her, took her out to dinner, had ravishing conversations. For the six months they were dating he apparently already had a girlfriend! You would think that she would have known he was already involved with another woman right? Wrong. Some people are just so good at sugarcoating their lives that they start to believe it themselves.

After such a heartbreak its difficult to try moving on, to keep your mind off such a thing. My suggestion is to channel that bad energy into something positively enriching.

TIPS:
1.Find a project that will distract you from what is happening.
2.Surround yourself with those friends that you miss so much.
3.When your ready go ahead and try meeting a new beau!

Everyone has their own advice on how you can get over these real emotion killers, its up to you to decide if you want to keep dwelling on this mess or just get over it and just BE HAPPY!

Setting My Sails

My sails are high in the sky! I am so lucky to meet such awesome people here in Syracuse, NY. OK, so I was promoted to Office Manager here at the Massage Therapy School. That is a huge accomplishment for me since I have been trying forever to grow with a company.

If you know me, you know that I cannot decide on a career for the life of me. Well... guess what??? I have decided to get my Masters in Advertising. I am currently studying the GRE (Graduates Records Exam) to get into Syracuse University so I can begin. It might be in 2012 but at least I finally decided. LOL.

This past holiday was so amazing! My mother came up to see me, my aunt, cousin, and uncle. This was the first holiday in years that I had an opportunity to spend it with family. The eve of Xmas was with Mike and his family. Man did they spoil me! I received so many gifts from them. Mikes parents are so awesome too, can't wait for my official title as their daughter-in-law ;) (wink wink).

Second Thoughts

If I moved back home to Florida, my attempts at a new life would be crushed. I moved to New York for love, independence and to find who I was. I ended up meeting the love of my life and am very happy I moved her to the CNY area. I might sound a litttle redundant, but I have to say to myself everyday so I can accept what I did.

Some people may be able to get over things, it just takes me a bit longer.

On a lighter note! I work at a fantastic place in Downtown Syracuse. No bonus this year but the compensate the entire staff had a choice between a massage, facial or a manicure! How awesome is that.
